Abstract
The first two activities of the PhD thesis project are described. Firstly, the chemical characterisation of six grape marcs extracts obtained from different grape varieties (three red and three white), is presented. Each extract has been analysed for the phenolics composition and content. Secondly, the application of an alternative extraction-purification method based on the use of Colloidal Gas Aphron (CGAs) id described to achieve different objectives, such as: reduction of extraction cost, reduction of the quantity of solvent used and, at the same time, increase of the phenolics purity grade.
