Abstract
This book analyzes the process of gradual transformation of the dairy Lombard during the nineteenth century. The activity is concentrated in the lowland areas of the region, and initially is based on a production of butter and cheese located on farms. At this stage it is very important the role of the major retailers, who buy from individual producers and then they place dairy products on different markets. In the late nineteenth century, this production begins to concentrate in real industrial plants, thanks to private companies and cooperatives of farmers
