Abstract
In the present paper the potential application of colloidal gas aphrons (CGA) generated from a cationic surfactant (CTAB) for recovery of antioxidants from wine-making wastes extracts is investigated. Trials were carried out on standard solutions of gallic acid (GA) 200 mg/l. Influence of pH, solvent (ethanol), and of CTAB to GA volume and molar ratios on recovery were studied. Best recovery (63%) was achieved from an aqueous solution of GA at a molar ratio of 16. Separation occurs driven by electrostatic interactions, but pH conditions are to be optimised to preserve the GA antioxidant power.
