Abstract

[Autom. eng. transl.] Maturity control is one of the many and challenging challenges climate change is posing to modern viticulture. The goal is the production of balanced grapes that allow to obtain wines with the right alcohol content, with a good acidity associated with an adequate phenolic and aromatic content. The late defoliation of the middle-apical portion of the foliage reduces the accumulation of sugars and delays ripening in an economic and easily mechanized way, without affecting the quality of grapes and wine.
