Abstract
[Autom. eng. transl.] Photosynthesis and respiration define the balance of the dry substance and influence the growth, the amount of production, the composition of the fruits and the control of biotic and abiotic stresses. Climate change is anticipating the phenological phases and collimating the period of maximum development with that characterized by high temperatures and limited water availability. This forces the plants to modify the natural pattern of growth and fruiting and to implement mechanisms of avoidance / adaptation. In vines defined isoidrico (Montepulciano) and anisoidrico (Sangiovese) some adaptation mechanisms have been analyzed in terms of gas exchange and energy dissipation during the water limitation period and in the re-irrigation phase. The results confirm the anishydricity character of the Sangiovese which, as such, is better suited to drought areas because during the limiting periods it guarantees good photo-assimilation and optimizes water use efficiency, while it shows a high recovery capacity to following the restoration of adequate water levels in the soil.
