Abstract
[Autom. eng. transl.] I like to take up and expand a concept developed in the 90s by the WHO which I have already referred to in previous editorials, namely that of shared responsibility in the management of food safety.
Unfortunately, it is undeniable that on a global level, although with specific differences per country and population group, nutrition is related to chronic and acute diseases with clear impacts on the economy of states. Being able to consume safe foods is the basis of human health and it should be everyone's right to access safe foods, in the right quantities and with the correct nutritional profile. To guarantee this right, governments must ensure that available food meets certain safety standards. Zero risk is not possible and, indeed, the level and type of exposure to risk can change rapidly due to changing consumption habits, climate emergencies and political situations. ....
