Abstract
The essay analyzes the symbolic value of the donut as a sweet ritual in many popular festivals of the spring period in Italy. In fact, among the festive breads, the donut seems to be the most widespread and with numerous variations. This special form therefore presents a rather complex symbolism that seems to be linked to at least three fundamental elements analyzed here: the figure of the snake, the circle and therefore the wheel, and the water-element linked to the lunar symbolism.
