[Autom. eng. transl.] The volume presents the results of a survey commissioned by Fiere di Parma from a group of researchers of the Catholic University, at the EXPO 2015 in Milan. For the first time, the main companies of the Italian food industry have been extensively investigated and compared, evaluating their economic results and the components of competitive strategies. The researchers' work started with an analysis of the financial performance of the 448 largest companies - alone capable of representing almost half of the entire turnover of the sector -, through the revision of the 2007-2013 financial statements. In the seven years taken into consideration - also marked by the economic crisis - companies on the whole show a growing sector capable of defending gross margins, albeit with sometimes considerable differences from one sector to another. Among the companies analyzed, a more in-depth look was given to the 120 companies that have shown superior performances over time compared to their competitors. Through direct interviews with these excellent companies we have entered into the merits of their strategies, discovering that at the base of their success there are concrete choices geared towards innovation, quality and the enhancement of tradition, combined with a consolidated international vocation.
