Abstract

Like drugs, the history of food products in the age of industrialization and globalization is closely linked to their ‘legal regime’, the set of public policies, patents and licenses, regulations, supervision, and repression of fraud, which concern all the steps from raw materials to consumption, included packaging and storage. The article analyzes how the formation of this regime in Italy was a crossroads between different processes and factors: technological change, new chemical knowledge and its international diffusion, public hygiene, and international trade
