Abstract

[Autom. eng. transl.] The research was conducted at a commercial farm of Italian Frisian cows. The test began in March and ended in February of the following year. The controls concerned the mass milk (every 15 days) and the individual milk (every month) of 21 cows equally distributed in three different stages of lactation (30-60, 80-120 and 150-200 lactation days). The milk analyzes concerned macrocomponents, somatic cells, pH and titratable acidity, fat surfacing, lactodynamometry, acidification rate, thiocyanates, lactoperoxidase activity, GOT, GGT and LDH. Significant seasonal variations were observed for all controlled parameters, with the exception of fat and lactoperoxidase. In the summer season, in addition to the known variations in macrocomponents, acidity and rheological parameters, significantly lower values of thiocyanates and GGT were observed, and significantly higher values of GOT and LDH.
