Abstract

[Autom. eng. transl.] The intensity of food transport is a trend destined to increase in its complexity. The research shows how relevant it is to analyze "how food travels", perhaps more than "how much food travels", in the globalized market of food products, in urban realities that change consumption habits and in the "global food system" consisting of five types of agri-food systems. The impacts in sustainability are strictly dependent on the efficiency of transport and logistics, of agri-food goods and of people moving to supply, from the field to the consumer and vice versa. Yet the concept of food miles has spread widely among consumer groups, attesting to significant cultural changes. Think of the all-Italian idea of "km-zero". "Can food transport be economically, socially and culturally sustainable, to preserve the ecosystem?" This pedagogically thorough question can be reformulated: "How can consumers, economic stakeholders and policy makers become environmentally friendly about food transportation?" The question leads to the question of which interdisciplinary training and research to plan to direct efforts towards this end. A new conceptual formulation could promote sustainable actions for mobility and transport over long, medium and short distances, for the long and short chain: the "green Kmetro".
