Abstract

[Autom. eng. transl.] The use of sourdough or sourdough in bread making is one of the most ancient practices, since the time of the Egyptians. There is no real legal definition of this natural yeast. Sour dough is, in general, a mixture of previous processes left to rise spontaneously with the selection of a natural micmflora both endogenous of the flour and representative of the surrounding environment and formed not only from yeasts (Saccharomyces Cerevisiae) but also from bacteria (lactobacilli, pediococci, leuconostoc, enterococci, micrococclli).
