Abstract

This PhD thesis research project is focused on the development of process technologies for food in developing countries, in order to extend the possibilities for economic and social growth of small communities located in the poorest areas. This approach involves the fulfillment of productive processes able to be economic independent and at the same time, sustainable, in terms of food safety, environmental and ethical.
