Abstract
[Autom. eng. transl.] Quinoa (Chenopodium quinoa Willd.) is an annual plant of the Amaranthaceae family, native to the Andes. Its landing in the Italian cultural systems is not only a search for novelty, but real agro-food innovation, even if of a limited size. Since the Year of Quinoa (2013) it has not been difficult to find agronomic, ecological, food and nutritional reasons to try to include this pseudo-cereal in the Italian and Mediterranean cultivation systems. In addition to the participatory approach that often accompanies this type of innovation, especially in their "organic" version, its introduction into cultivation requires research and experimentation on the various aspects of agronomic technique: from varietal choice, to pedo-climatic adaptations, to cultivation and post-harvest operations. Finally, to give concrete sustainability to the cultivation of quinoa, the need to organize a real supply chain will be illustrated, capable of guiding agricultural producers, of harvesting and transforming production, to provide for effective marketing.
