Abstract

The study allowed to set up a procedure for extraction and for analysis of the ochratoxin a by liquid chromatography with fluorescence detection (LC-FLD) and to verify the ochratoxin a presence in wine after malo-lactic fermentation made with Lactobacillus plantarum.
