Abstract

[Autom. eng. transl.] For beef there was again a sharp decline in slaughtering in 2013, after the expansive phase in quantity in 2011 and the decreases in the two previous years. The signal of the current situation of economic difficulty with a consequent change in consumption choices by Italian families is further confirmed and amplifies the difficulties related to the decline in the bovine herd. In 2013, the decline in slaughtering (-13%) added to the drop in imports (-4.8%), decreases the availability on the domestic market, to the detriment of consumption, and has repercussions on the deficit with respect to consumption which returns above the 25%; however, the deficit in trade with foreign countries improves due to a lower decline in exports.
