Abstract
[Autom. eng. transl.] This work, after a quick analysis of the characteristics and the evolution taking place in the Italian dairy supply chain, reviews the main technological and regulatory changes that are characterizing it. Particular attention is paid to milk for direct consumption and to milk for the dairy industry.
