Abstract

[Autom. eng. transl.] The objective of this analysis is to verify consumer preferences for organic foods using, in addition to traditional socio-economic variables, factors capable of measuring both the perception of health risks and, more generally, of food risks, and the environmental risks and individual perception of environmental problems. The data were obtained from a consumer panel using structured online questionnaires. For five categories of food, fruit and vegetables, dairy products, eggs, meat and cereal-based products, logit models were estimated ordered with the willingness to pay as a dependent variable. The results show a low significance of the socio-demographic variables, but a significant weight of the attitudinal ones. Among the latter, contrary to most of the available empirical analyzes, the environmental motivation to purchase is significant and more relevant than the health motivation.
