Abstract

[Autom. eng. transl.] Compared to other food preservation techniques (drying, vacuum or modified atmosphere, addition of preservatives, salting, smoking, etc.), freezing guarantees greater safety in terms of hygiene and health, greater maintenance of the original quality obtained with the lowest technological impact on the product, the longer shelf-life and the almost absolute guarantee of compliance with the physical, chemical and organoleptic characteristics of food. Indeed, freezing is now recognized as the most "natural" method of conservation: it only needs cold and does not require additives. Furthermore, with the help of frozen products it is easier to have a complete and varied diet, which is now considered the best way to keep our body efficient and protect it from the stress of everyday life.
