Abstract

[Autom. eng. transl.] The contribution aims to trace a history of the printed tradition and therefore of the fortune of the "Opera" of Bartolomeo Scappi († 1577), Pope Pius V's secret cook. Printed for the first time in 1570 by Michele Tramezzino in Venice , this full-bodied volume in six books contains 1017 recipes ranging from meats to desserts, as well as detailed indications so that the menu calendar respects the seasons and religious prescriptions. Twenty-seven highly detailed full-page chalcographic tables enrich the edition, precious witnesses of the equipment and duties in the kitchens of the time. The cookbook is essentially an encyclopedia of Renaissance gastronomy, the result of the professional experience of its author and a precious source for the history of gastronomy. The fortune enjoyed by Scappi's "Opera" is testified by its various editions from 1570 to 1643: the intervention will focus on these, analyzing and comparing their elements. In this way it will be possible to identify the solutions adopted by the publishers in the publication of one of the most important gastronomic manuals of the Renaissance. Ample space will certainly also be reserved for the valuable figurative apparatus: it will be observed how (and if) subsequent editions have attempted to reproduce the beautiful plates of the first edition.
