Abstract
[Autom. eng. transl.] The set of data, inherent to the nebbiolo, makes it possible to note that, when the oxygen supply is similar, independently of the chosen modalities, there are no significant differences in the phenolic map of the products obtained in the first phases of conservation. When the quantity of oxygen introduced into the mass, especially during the final maceration phase, is different and controlled, as in the case of Grenache, the products which have received a higher air intake show a better sensory profile.
