Abstract

[Autom. eng. transl.] Based on my teaching, research and consumer experience, I have the feeling of a widespread and growing distrust towards the food industry. In particular, towards the introduction of foods, ingredients and additives considered “synthetic”, in the sense of “unnatural”, the use of substances and technologies considered dangerous for human health and the environment, see pesticides, microplastics, GMOs, irradiated foods, cultured meat. It seems to me that there is less concern for biological hazards, perhaps because food poisoning episodes are less emphasized by the media. Furthermore, many studies seem to indicate that although interested in sustainability, few are actually willing to pay more for more sustainable products, of equal quality.
