Abstract
[Autom. eng. transl.] This chapter is dedicated to the analysis of the organic dairy sector, with particular attention to the stages of agricultural production and the transformation of organic products. Given the lack of availability in specific information both from official sources and in literature, the study is centered on two sample surveys, carried out using a structured questionnaire, on both stages: these are non-probabilistic samples, but which nevertheless allow to highlight some of the main characteristics of the sector and the evolutionary trends in place. The results of the surveys presented below are then supplemented by the presentation of two specific cases, one relating to an integrated supply chain and the other to an important specialized wholesale distribution group.
