Abstract
[Autom. eng. transl.] In the first part of this chapter we examine the trend of the price of stable milk in Italy during 2011 and the first part of 2012, using in particular the simulation of the price in Lombardy performed by the Latte Observatory, compared with the situation in France, Bavaria and Austria, and the simulation scheme conducted on the price of milk in Piedmont. In the second part, in the absence of a national interprofessional agreement from 2002/03, the most significant collective agreements / contracts of which we have come to know are illustrated for the 2011/12 campaign.
