Abstract
[Autom. eng. transl.] The Italian beef sector is historically one of the major sectors of our agri-food system, but it is not without difficulties. If it alone represents about 6.5% of the total agricultural production, and 19% of the entire animal husbandry, it is true that for several years, this sector has been gradually downsized: ten years ago the same percentages were respectively of 8.4% and 25.2%, since while the value of agricultural production has increased by 17% in the meantime, and that of animal husbandry by 19%, that of beef cattle breeding has instead lost 9%. The first factor of crisis that emerges is therefore the substitution with other types of meat, linked above all to a growing disaffection of the consumer, which the current period of crisis has further accentuated.
