[Autom. eng. transl.] This work, now in its seventeenth edition, is proposed as an instrument of knowledge of the dairy sector in support of those who, for various reasons, are called to contribute to the functioning of the dairy sector. The main effort was, therefore, to combine the completeness, timeliness and relevance of the information provided and the analyzes performed, with the synthesis necessary to make it an effective tool. The layout of the study provides that it is not limited to a simple list of market facts; it represents, rather, an analysis of the entire production chain, able to provide interpretative keys which, starting from the behavior of individual operators, consider the effects of the international scenario and of the sector's Community policies, to arrive at a synthesis accomplishment of the functioning of the national "milk system".
