Abstract

[Autom. eng. transl.] The paper examines the consumption of milk and its derivatives at the pontifical canteen in light of the factors that determined its use (social differentiation, religious precepts and medical opinion). It is also stressed that the cheese was the object of a gift from the French sovereigns to the Pope and that contacts with the transalpine world influenced the consumption of dairy products during the fifteenth century.
