Abstract

[Autom. eng. transl.] Food consumption in Italy is changing significantly, both in terms average composition of food expenditure, both in terms of specific products consumed. The drivers of change in food consumption are linked to both important socio-demographic phenomena that characterize Italian society (aging of the population, immigration, new family dynamics, new ways of managing the work and free time ...), both to the new needs that consumers manifest in comparisons of food. Among these new trends, the growing one plays a fundamental role awareness of the relationship between nutrition and health and the sustainability of behavior of consumption. In this context, the present work analyzes the relevant main data to the trend of food demand in Italy, using both the official ISTAT sources that data from the most important market research companies. In particular, the job seeks to analyze in detail the characteristics of new consumer trends (products, volumes and growth trends), focusing on some case studies. The work ends with some considerations regarding the role of policies in this specific area of application.
