Abstract

[Autom. eng. transl.] Out of 49 PDO cheeses recognized in Italy, there are 14 cheeses produced in Lombardy: Bitto, Formaggella del Luinese, Formai de Mut of the Brembana Valley, Gorgonzola, Grana Padano, Nostrano Valtrompia, Parmigiano Reggiano, Provolone Valpadana, Quartirolo Lombardo, Salva Cremasco, Silter, Strachitunt, Taleggio and Valtellina Casera. In this chapter an analysis of these chains is presented, reporting the structural data, which in turn are detailed based on the type of actors involved, from farms to seasoners. The data includes the quantities of raw material processed, the volumes of certified product and the number of companies involved.
