Abstract
[Autom. eng. transl.] Education and training stand as constructive forms of our complex being viator on the earth and are also generative of the change necessary to recover the authentic sense of our being creatures. The environment is configured for the German educator as an umbilical cord and source of human formation. Starting from the awareness that in the world "everything lives, in each other, with one another, for each other", reflecting on the conditions for sustainable living allows us to deal with problems, commitment and hope the future challenges that the Earth, the garden of humanity, presents us. The human relationship with the environment, with the world, is also structured through the relationship with the food we eat. Nutrition as a metaphor of the relationship with ourselves, with the other, with life can be investigated from different perspectives and disciplinary areas, demonstrating its complexity. Food as a precious resource and value of education for the growth of the person and key to access to otherness can be placed as a relationship mediator, a virtuous intertwining of traditions and cultures. Human eating in its peculiarity requires adequate clarification in order to investigate its profound educational value, with an emphasis on the vital relationship that links man and food.
