Abstract
This chapter presents the history and philosophy of Slow Food, an international
non-profit organization established in Italy at the end of the 1980s that has grown
into a global food movement active in over 150 countries. The chapter shows the
aim of this movement to build a more sustainable and resilient food system
through the protection of local biodiversity and local, traditional production.
The chapter offers an overview of the movement and its characteristics, explains
its origins, and looks at the philosophy and a selection of its most important
initiatives.
