Abstract
[Autom. eng. transl.] In recent years, Italian dairy farming has undergone profound changes that have led to radical changes in the structure, positioning our sector among the most advanced in Europe. This was achieved thanks to the total commitment and sacrifice of our breeders but also to the price of abandoning those in great difficulty. The restructuring activity is still in progress, a sign of a constantly evolving sector, attentive to market trends and which has to deal with the increasingly demanding phenomenon of demand maturity, and with the demonization by the media of the milk and animal exploitation. In this chapter the statistics on the structure of the farms coming from different official sources will be presented because in each one there are characteristics that allow, with comparison, to interpret the evolution of our dairy livestock. This year the results of the Istat sample survey on the structure and production of farms (SPA) are not yet available with reference to the 2015/16 agricultural year, conducted at the end of 2016, so we will limit ourselves to recalling some trends and to further update the statistics available annually.
