Abstract
[Autom. eng. transl.] Dairy farming in 2015 saw the end of an important period in its history, with the termination of the quota system, in force since 1984. The stables now have the possibility to restructure themselves without constraints but this does not seem to have been, at least in the immediate help to the sector which, even in 2015, saw the number of animals fall, albeit slightly, and significantly the number of farms written in the National Database. The overlap of more negative factors both internationally (the Russian embargo and the Chinese economic crisis) and the national one (the drop in consumption and the abundance of the Grana market) have put the national sector in serious difficulty by seriously discouraging producers . In this chapter the statistics on the structure of the farms coming from different official sources are presented, since each of them presents characteristics that allow, with comparison, to interpret the evolution of our dairy livestock. In this we also make use of the results of the ISTA sample survey on the structure and production of farms, with reference to 2013, recently released
