[Autom. eng. transl.] In 2017, the restructuring process of our dairy animal husbandry continues between shrinking assets, closing stables and increasing milk production. Milk production of all species has grown by over 3% and the trend would still seem to be on the rise in 2018, while both dairy cows and sheep and goats are falling. The results of the Istat sample survey on the structure and production of farms (SPA) 2016, on the other hand, present us with a counter-current scenario with a number of herds with dairy cows and related cows growing, especially in the southern and less suitable regions , but which is not confirmed in the zootechnical registry data; for the other species, however, the data confirm the trends of the past, with decreasing farms, but increasing stocks. This chapter presents the statistics on the structure of the herds from different official sources which allow, through a comparative analysis, to interpret the evolution of our dairy farming.
