Abstract

[Autom. eng. transl.] There are many Italian excellences that are expressed in the production of chocolate, the result of skills throughout the cocoa processing process and a great ability to manage and control the quality system. This system must be reliable, updated and certified, to guarantee a hygienically safe product, constantly subjected to checks, tests and checks at every stage of production. Certainly a challenging path, where the focus on semi-finished products is increasingly important, essential, to create a state-of-the-art chocolate, respectful of the typicality and characteristics of the cocoa of origin, made with safe ingredients . The interest in correctly preserving raw materials and semi-finished products is a primary need for production companies that aim to obtain rationalization and packaging optimization measures, process, logistics, as well as being able to objectively assess the durability of raw materials and ingredients . It is therefore important that manufacturers have data and tools available to predict the maximum storage time, based on certain storage conditions.
