Abstract
[Autom. eng. transl.] the production and consumption of wine has accompanied history for millennia, becoming over time, in different civilizations, a cultural fact. Wine is an extraordinary product, which contains material and immaterial (symbolic) factors, sometimes contradictory, representing at the same time history and legend, science and art, sacred and profane. Among the material attributes we can indicate the health properties recognized since the times of the Egyptians, the Etruscans, the Greeks, the Romans, and so on. More recently L. Pasteur used to say that "wine is the most healthy and hygienic drink" and the French Paradox has hypothesized a link between moderate wine consumption and the reduction of the risk of cardio-vascular diseases; some wine compounds have been called into question above all polyphenols, which also have other sensory properties. The conference reported the results of a survey, on a sample of European consumers, of how the health aspect of wine is perceived and then treated the role of viticultural and oenological factors in modulating the presence of polyphenols in grapes and in the wine.
