Abstract
[Autom. eng. transl.] Some phenolic forms with low redox potential could be used in wines as SO2 substitute antioxidant additives. However, their use in the disgorgement of sparkling wines produces a more rapid intensification of the yellow tint of the wine and, above all, an increase in the formation of sotolone, responsible for the smell of oxidized.
