Abstract
[Autom. eng. transl.] Overall, the data underline that, although acting on physiological principles totally different from those inspired by the thinning of the bunches, early defoliation is an effective tool for containing the yield of grapes in Sangiovese and, in this case, more efficient than the thinning because it is able to maintain or improve the compositional characteristics of the grapes in the face of a lower reduction of the pending load compared to sparse screws. Moreover, the data show how the vines subjected to early defoliation, although reaching optimal levels of sugar content and phenolic maturity, also retain an acidic content similar to that of control, thus showing the potential of a decoupling of the accumulation / degradation kinetics of individual components particularly useful in a marked trend of "global warming".
