Research output: Chapter in Book/Report/Conference proceedingConference contribution

Abstract

Starch from cereals is the major energy source for humans and its chemistry has strong effects on kinetics of digestion and on metabolic responses. There is also evidence that slowly digested starches are beneficial for management of metabolic diseases.
