[Autom. eng. transl.] Social sustainability, declined through virtuous practices, is the guiding thread of the volume that challenges pedagogy and its connotation of critical science, recovering the peculiar values that make food an educational object. In this perspective, the prevention of food waste is part of the issues related to human training and sets up a challenge linked to educational systems for the promotion of human rights, proposing a reference to the axiological and ethical-moral dimension. The volume documents the results of the pedagogical research Think, eat, don't waste. Prevent food waste, educate! promoted by the High School for the Environment of the Catholic University of the Sacred Heart and co-financed by the Cariplo Foundation.
