Abstract

[Autom. eng. transl.] The acceleration of the technological maturation of the grapes, associated with the growing demand for wines with moderate alcohol content, are leading to reconsider the current production models and to focus attention on the cultivation techniques capable of regularizing a maturation that has become too accelerated. suitable to buffer the negative effects (excessive accumulation of sugars in the must, high alcohol content, loss of acidity and aromas) the postponement of winter pruning can be included.This investigation was carried out with the aim of verifying the possibility of delaying maturation of grapes as well as to control the production by late and very late winter pruning.
