Abstract
[Autom. eng. transl.] Also in 2016, the process of concentrating companies in the cheese and PDO / PGI processed meat sectors continues in both Lombardy and nationally, although in some cases at a lower rate, or even with trend reversals, compared to previous years . PDO cheeses are confirmed as an important "tool" for the valorisation of raw milk, so much so that the PDO milk processed in Lombardy in 2016 rises by 0.8% on an annual basis, reaching 2.4 million tons. Although most of the processed meat has obtained a PGI and non-PDO certification, which binds production more to the geographical areas of origin, there has been an even greater increase compared to the dairy of the raw material destined to be transformed into cured meats. PDO / PGI, which reflects positively on the production of all products whose entire supply chain takes place exclusively on Lombard soil. Analysis of the individual supply chains allows us to deduce some noteworthy important aspects for the development of the Lombard PDO / PGI sector:
