Abstract
[Autom. eng. transl.] The Lombardy PDO / PGI processed meat and cheese sector is experiencing a phase of concentration of the operators involved, but this trend is slowing down for dairy products. In Lombardy this phenomenon is very evident at the agricultural level, where, in 2017 (latest data available from the ISTAT database), certified breeders of the DOP cheese supply chains decreased by one percentage point on an annual basis (lower than the rate of reduction in the recent years), while those belonging to the PDO and PGI meat sector fell by 1.4%. In the case of milk, the data on farms is aligned with that of producers, -1.1%. On the other hand, in the meat sector, there is a contrary trend, albeit of modest entity, with an increase of 0.1% in the number of farms.
