Abstract

[Autom. eng. transl.] This book focuses on small-scale peasant production and on the protagonists of this part of our food system, so widespread in all its forms practiced but difficult to quantify in our country, which moves between culture and economy, between production for self-consumption and production for the market. Through food, the volume tells a segment of the food system that is essential to preserve the territory from abandonment and the threats of the climate crisis, but also to preserve and spread knowledge and know-how with daily practices.
