Abstract

The research fields related to the drink in question are multiple and range from the productive sector to the economic sector, involving socio-political and environmental sustainability aspects, an increasingly important topic in contemporary society. The following is a summary of a study that has as its objective the analysis of coffee grinding, one of the fundamental phases of its production cycle, which outlines the possible uses and modifies its sensory and nutritional properties.
