Abstract
[Autom. eng. transl.] Apparatus that can be used for the vinification of a liquid must with its own lees, in particular for the white vinification of both white grapes and red grapes, said apparatus comprising a must/wine containment tank, characterized by the fact that said tank comprises means active on the must/wine, in particular including means for introducing a technical gas operatively connected to at least first feeding means for introducing at least a first technical gas into the must/wine and to at least second feeding means for introducing into the must /wine at least a second technical gas of a different type.
