Abstract

[Autom. eng. transl.] The research considered eight DOC wines “Ruché di Castagnole Monferrato” of the 2007 and 2008 harvests, of which the sensory profile was obtained and the dosage of some stilbenes (trans- and cis-resveratrol, ε- and δ-viniferine) was performed . The results showed significant visual differences in both the vintages and a greater aromatic variability in 2008. The wines of 2008, the freshest and most rainy year of 2007, presented greater flavor, greater spicy notes and higher levels of stilbenes. Particularly interesting is the presence of δ-viniferine, rarely dosed in other wines of the trade, which has reached values up to 10 mg / L. Trans-reseveratrol ranged from 0.8 to 10.3 mg / L, cis-resveratrol from 0 to 20.2 mg / L and ε-viniferin from 0 to 2 mg / L.
