Abstract

[Autom. eng. transl.] Green pruning includes a series of operations carried out during the vegetative season aimed at establishing an optimal vegetative-productive balance, as well as pursuing unfavorable microclimatic conditions for fungal settlements and harbingers of a good quality of grapes. Many of these are easily mechanized, while the thinnings of shoots and bunches, still forcibly manual, involve an inevitable increase in operating times. The precocious DEFOLIZIONE and the thinning of the bunches influence the productive performances and the composition of the grapes. These green pruning procedures can be used to accelerate sugar accumulation by anticipating the harvest when the acidity of the must is still at ideal levels. This modulation of maturation can be useful in all white varieties destined for sparkling or sparkling wines which, in hot climates, are particularly exposed to the risk of not being able to maintain adequate acidity. Moreover, for this purpose, in environmental conditions that may favor rot and / or sunburn of the bunch, early defoliation is preferable.
